Chocolate Raspberry Mousse with Cookie Dough Bites

This Chocolate Raspberry Mousse is simple to make for a fancy party, a special dinner IN for two (looking at you, Valentines Day), or for an after dinner dessert any day of the week. I even Halloween-i-fied the mousse here. It's so versatile!!

For Valentine's, I love to top the mousse with:

  • CocoWhip (dairy-free whipped cream!)
  • Fresh raspberries (Soooooooooo gorgeous!)
  • Mini Pink Cookie Dough Bites (Recipe below!)

This recipe couldn't be simpler, like 4 ingredients in a food processor for about 4 minutes --- (excluding the cookie dough bites, but they are totally optional!). The chocolate mousse is full of healthy fats and yummy flavor.

Chocolate mousse is one of the easiest ways I've found for my daughter to like avocado! She's normally not a huge fan --- so I try to pair it with chocolate, like in fudgesicles and muffins. You can find both of those recipes in my 2nd cookbook.

To take this dessert to next-level awesome, I've topped it with mini raspberry cookie dough bites! Grain-free (made with almond flour), dairy-free (sweetened with So Delicious creamer!), and full of veggies and fruit (helllllllllllo, beets + fresh raspberries!) this beautiful egg-less cookie dough is perfect as a garnish or to eat by the spoonful! Ingredients

2  
medium ripe avocados
5 1⁄3 ounces
So Delicious Dairy Free Raspberry Yogurt Alternative (or sub vanilla flavor)
5 ounces
dairy-free chocolate chips (melted)
1 tablespoon
Cocoa Powder
   
---FOR TOPPING---
   
CocoWhip
   
fresh raspberries
   
mini cookie dough bites (recipe below)

Instructions

  1. Combine all ingredients in a food processor. Puree until smooth.
  2. Store in fridge or serve immediately.
  3. Top with CocoWhip, fresh raspberries, and mini cookie dough bites (optional - recipe below)

Raspberry Cookie Dough Bites

Ingredients

1  
small beet
1 teaspoon
Coconut Oil
6  
fresh raspberries
1⁄2 cup
raspberry jam
1⁄4 cup
granulated monkfruit (or sub raw cane sugar)
2 tablespoons
So Delicious Dairy Free Vanilla Creamer
1 tablespoon
Coconut Oil (melted)
1 teaspoon
Vanilla Extract
1⁄4 teaspoon
Sea Salt
1 1⁄2 cup
almond flour
1⁄2 cup
coconut flour
3⁄4 cups
dairy-free chocolate chips

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut off the beet bulb and peel it. Wrap the beet in aluminum foil and top it with 1 tsp of coconut oil. Roast it in the oven for 45 minutes, then let it cool. You can speed up the cooling process by putting it in the fridge or even the freezer for a few minutes.
  3. Combine the roasted beet, fresh raspberries, raspberry jam, monkfruit, oil, creamer and the vanilla extract in a high powered blender. Blend until smooth. Pour the mixture into a medium mixing bowl.
  4. Add in the dry ingredients to the blended mixture: almond flour, coconut flour, sea salt, and chocolate chips. Stir until mixed completely.
  5. Put the dough in the fridge for 30 minutes, then take it out and roll into mini 1/2 inch balls. If it still seems too sticky to roll, add a bit more coconut flour.
  6. Enjoy! And store any leftovers in the fridge for up to 3 days, or the freezer for up to a month.
