Pineapple Chicken Salad /// via Nosh and Nourish
1 1⁄2 cupshredded cooked chicken
1⁄3 cupdiced fresh pineapple (or sub canned)
1⁄3 cupSilk pineapple dairy-free yogurt alternative
1⁄2 tablespoonSoy Sauce (or sub coconut aminos)
1⁄8 teaspoonGarlic Powder
1 tablespoonshredded carrot
1⁄3 cupcashews (I used salted)
- Combine all ingredients together into a small mixing bowl.
- Stir until throughly combined.
- Serve cold with crackers or on bread, or refrigerate for later use.
